Corn


This is a great recipe. At the American Royal Barbecue contest we made corn muffins from Jiffy Corn Bread Mix with a tablespoon of sugar added( baked according to directions). We scooped out the center of the muffins and spooned in the corn. Out of the 275+ teams, this recipe took 2nd palce one year and never placed lower than 10th place. Another variation is to cook the corn bread in a skillet then scoop out the center of the corn bread and fill with the corn.

The filling for the muffins:

1 Large sack of whole kernel frozen corn(5inch x 10inch size, I think 2 pounds)
1 Stick butter
1 Package Philiadelphia Cream Cheese

Melt everything together in a sauce pan until heated through. Season with salt and pepper.
